French description: Il est surprenant qu'une fonction aussi importante que l'approvisionnement quotidien d'une agglomération telle que Paris n'ait suscité que peu d'études d'ensemble, depuis 1137 et l'apparition d'un marché spontané dans le cimetière des Champeaux. L'auteur traite des Halles de Paris dans leur totalité, depuis ses origines jusqu'en 1969, date de leur transfert de Baltard à Rungis. L'ouvrage envisage les péripéties successives de l'implantation des Halles et de la construction des bâtiments, ainsi que leurs modalités de fonctionnement (exposition des marchandises, techniques de vente, propreté, circulation, accueil des marchands forains) et en retrace les étapes depuis le cimetière des Innocents jusqu'aux pavillons de Baltard. Il raconte les multiples événements historiques (émeutes, révoltes) qui se déroulèrent dans ce quartier et qui en firent l'un des plus vivants de Paris. 248p (Librairie Droz 2010)
